My children adore these banana oatmeal chocolate chip cookies because they believe they’re having a delicious dessert, not realizing it’s a nutritious snack! I enjoy preparing a large quantity and storing them in the freezer for easy access during hectic mornings or as a fast snack.

These can be enjoyed by those with dietary restrictions and can easily be made vegan.

Ingredients:

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/4 cup raisins or chocolate chips (optional)
  • 1/4 teaspoon cinnamon (optional)
  • 1/4 teaspoon vanilla extract (optional)

Instructions:

  • Begin by preheating your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it.
  • In a mixing bowl, thoroughly mash the ripe bananas until they form a smooth consistency.
  • Add the rolled oats to the mashed bananas and mix until well combined.
  • If desired, incorporate optional ingredients such as raisins, chocolate chips, cinnamon, or vanilla extract for added flavor. Stir until evenly distributed throughout the mixture.
  • Using a spoon or cookie scoop, portion out dollops of the mixture onto the prepared baking sheet. Leave enough space between each cookie to allow for spreading during baking.
  • Use the back of the spoon or your fingers to gently flatten each cookie slightly.
  • Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges of the cookies turn golden brown.
  • Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Your homemade banana oatmeal cookies are now ready to be enjoyed as a nutritious snack or dessert option!

Feel free to customize the recipe by incorporating additional ingredients such as nuts, seeds, or dried fruits. Store any leftovers in an airtight container for freshness. Enjoy your delicious and healthy treat!
